Lunch on the go.
Since starting school at Bastyr, I've been taking my lunch nearly every day and allowing myself a treat of buying lunch in the cafeteria once a week. Bastyr has what every cafeteria should have: local, farm-fresh (and even on-the-grounds-garden fresh) foods that are mapped out so you can see exactly where your meal is coming from. However, for those days that I don't buy lunch (because a poor grad student income is basically zilch), I count on bringing a quick, no-fridge-required lunch with me to school.
That lunch usually consists of 1/2 cup whole grains (often rice or quinoa) + 1 cup each frozen (or fresh and already cooked) vegetables, such as peas, carrots, corn, or stir fry. There are microwaves, salt and pepper on campus, so I grab a plate from the cafeteria, zap my lunch for up to a minute, and enjoy a "home-cooked" meal while at school. I usually pack a treat of some sort for later, to sustain me through the afternoon slump. Bastyr always has at least one (and often more) vegan sauce in their buffet line, and I pay a whopping $0.25 to grab a cup of that as a flavor-booster to my otherwise very plain lunch.
