Vegan and Gluten-Free Chocolate Avocado Pudding

I've been all about the easy meals lately, and the same goes for desserts. After closing my bakery, I've been less likely to fire up the old Kitchenaid mixer and more likely to grab a piece of fruit or a scoop of Coconut Bliss ice cream. This pudding seemed like the logical next step; it's full of delicious and good-for-you ingredients, plus it takes hardly any time to put together. Seems perfect to me!

Chocolate Pudding
Gluten-free, Vegan, Refined-sugar free
Makes 2 normal servings or 1 humongous serving

1 small avocado or 1/2 large avocado, peeled
1/2 c. agave (or substitute with another liquid sweetener)
1/2 c. cocoa powder
1/2 c. vegan yogurt (I used So Delicious plain-flavored coconut milk yogurt)
1 t. vanilla
dash of salt (optional)


  1. Cut the avocado into smaller pieces and put into a food processor bowl. Process for about 30 seconds. 
  2. Add agave (or liquid sweetener of choice), cocoa powder, vegan yogurt, vanilla, and salt (if using). Process for about 30 seconds, then stop the machine, scrap the sides, and process for another 30 seconds. 
  3. Repeat this until the pudding is at your desired texture and then serve. 
  4. Eat immediately or keep in fridge, covered, for up to 24 hours.
