I started with this original recipe, and, because the peach bars looked so dang good, I decided to completely revamp them into a Geanna-style recipe. That meant: removing gluten, animal products, and refined sugars. I have to say, what I ended up with far exceeded my expectations AND my taste buds.
Refined-Sugar-Free Peach Bars.
Gluten-free, Vegan
Ingredients:
BARS:
2 c. sorghum flour
1/2 c. brown rice flour
1/2 c. arrowroot starch
1/4 t. baking soda
1/4 t. salt
1/2 t. psyllium husks
1 t. cinnamon
pinch nutmeg
1 c. coconut oil, melted
3/4 c. coconut sugar (or granulated sugar of choice)
1 t. vanilla extract
FILLING:
1/2 c. peach jam
1 c. sliced peaches
1 T. coconut sugar (or granulated sugar of choice)
Method:
- Heat oven to 350'.
- Prepare the bars first. Whisk together flours, spices and sugar in a medium-sized bowl. In a large bowl, mix together the liquid ingredients. Add the dry mixture to the liquid mixture.
- Reserving 1/2 cup of dough for the topping, press dough into a square 8"x8" pan.
- Heat the jam on the stovetop on low heat for 1-2 minutes; whisk. Spread jam over the dough. Place peach slices on top of jam. Sprinkle sugar on top of peaches. Crumble reserved dough on top of the sugar. Bake 25-27 minutes, or until the dough on top is slightly golden.
