Back to the Classics: Roasted Butternut Squash Soup from Vegan with a Vengeance

Throughout Vegan Mofo, I'm going to shuffle through my old vegan cookbooks and show you their highlights. I will not be posting the recipes because that's illegal and I didn't get permission from the authors and also, I want you to go buy the cookbooks and enjoy them for yourselves!

Anyway, I had to start out with the very first vegan cookbook I ever owned. My brother and sister-in-law gave this book to me years ago and, although it has a few food stains here and there that obstruct some of the lists of ingredients, it's still one of the best in my cupboard. My ONLY complaint is its lack of photos, but that's because I'm a cookbook snob. Otherwise, I love the snarky humor, its ability to know exactly what I'm in the mood for, and, of course, the perfect vegan recipes.

Here's a beautiful photo (actually, it's really messy because I'm sick and don't have time to take nice pictures right now in between snuffles) of the delicious roasted butternut squash soup from Isa Chandra Moskowitz's fantastic Vegan with a Vengeance. I made it last night, and it warmed not only my stomach but my soul.
