Throughout Vegan Mofo, I'm going to show you recipes from my favorite vegan cookbooks.
I'm not exactly sure I can keep calling this series "Back to the Classics". Maybe I should just stop saying that and instead call it, "My Favorite Cookbooks". That will probably be more accurate, especially because today's featured cookbook is not even 12 months old!
I've already reviewed the fabulous Great Gluten-free Vegan Eats by Allyson Kramer, so I'm not going to gush on and on about how good it is again. However, I am going to reiterate that every.single.recipe.is.amazing. I have yet to come across a bad recipe. Not ONE. That's a pretty amazing feat for a cookbook, and I think it needs to be mentioned.
This recipe is for the delicious Vodka Cream Sauce. It's flavorful, fresh, and, paired with some fresh corn and gluten-free spaghetti, perfect for a cool autumn evening. Of course, because I'm absolutely addicted to Papa G's BBQ tofu, I had to add it in, and it really gave it a lovely kick.
So, obviously, I'm serious about how much I love this cookbook and how I really think you should buy it or at least get it from your library. Now if you'll excuse me, I'm going to go back to drooling over these pictures...
