Back to the Classics: Appetite for Reduction

During Vegan Mofo, I'll be sharing some of my favorite recipes from my favorite vegan cookbooks! 


Okay, this is hardly a classic (it was published just last year), and I realize I featured an Isa Chandra Moskowitz masterpiece last week, but c'mon, it's still a must-have, right? If I say it is, then it must be. And besides, basically everything Isa touches (or, ahem, writes) is gold, so why can't this already be a classic even though it's only a year old?

Anyway, this Cauliflower Pesto soup hit the spot for D and me last night. I'm serious; we ate it up so quickly you would have thought there were guns pointed to our heads (sorry, is that too violent of an image?). Even though I'm not traditionally a soup person, I've really been digging these warm, soul-quenching pureed soups lately. What's next for me? Pureed eggplant soup? Ugh, that actually sounds really gross, so I probably won't be making that. Regardless, as I write this, I'm remembering how good that soup tasted, and I'm tempted to make more. We are out of cauliflower, though, so this may be tough...
