Happy Anniversary to me!
I became a vegan right around this time of year 4 years ago. The reason I don't quite remember the exact date is because I had to finish a carton of eggs first and I don't recall the day I finally did that! Anyway, for four years I've been striving to do my best to eat a plants-based, whole foods diet. I've learned so much in that time, and I've had a blast becoming part of the wonderful [international] community of vegans.
To celebrate, I'm going out with D for lunch...and then I'm buying a mini donut pan so I can start whipping up some delicious treats. Because that is the way I roll.
