Recipe Tuesday: Fusion Tacos. Vegan and Gluten-free

D and I were wondering what we wanted for dinner on Sunday, and over the course of an hour, we developed this fabulous and filling meal. I'm going to credit him with the idea and me with the ability to see it through. Together, we created something awesome.

We called them Fusion Tacos.

Start with a corn tortilla, microwaved and then heated on a grill for about a minute. Add prepared lentils.

Add prepared rice.

Add caramelized chopped red onions.

Finish off with chopped tomatoes, chopped avocado, a little vegan tzatiki, and my new favorite: Papa G's original seasoned tofu, which we sauteed in toasted sesame oil. In one weekend, D and I ate three packages of Papa G's tofu (the other two were both barbecue-flavored). I apologize to all of you not living in Portland, because this stuff is mind-blowingly tasty.
