Farm to Table: Carrots. Vegan and Gluten-free


I love caramelized carrots. There's just something about them - so easy, so sweet, and the perfect texture!


I've been picking up carrots almost weekly at my CSA, and after a while, it's hard to become creative with them. However, making and eating caramelized carrots is always a treat.


Making them couldn't be easier. Chop off each end, then cut into whatever size you prefer (I like mine to be about 1 1/2 inch because they are easy to chew in a bite). Heat about 1 Tablespoon of oil on medium high heat in a pan. After about 30 seconds, start sauteing the carrots in the oil. Stir frequently, and cook for about 5 minutes before adding 2 Tablespoons brown sugar. Keep stirring often until the brown sugar and oil really start turning the carrots brown, about 10 more minutes. Sprinkle with seasonings as desired. Serve warm.

Carrots are great for you. They provide good amounts of dietary fiber, iron, potassium, vitamin A, and many other nutrients. 

And, of course, they are delicious.
