This week's CSA share brought cauliflower, more gluten-free pancake mix, corn on the cob (specifically reserved for the CSA shares - no "normal" farmar shopper even knew these were available!), salsa, broccoli, carrots, and eggplant.
I am not really a fan of eggplant, but I decided I needed to branch out a bit more, so I picked some up. Now I need suggestions as to how to prepare it!
Any ideas?
