I used this recipe as a guideline, but I kind of went off-the-cuff after a while so I could use the ingredients I had on hand.
This was a very odiferous liquid! Boiling vinegar is never fun, especially in a small house with little ventilation.

The funnel was a life-saver for this project. It really helped reduce the potential spill factor.
The jars had to sit out for a while before I could place them into the fridge. I decided not to put the jars into a boiling water bath so that the scapes would hopefully stay crisp. I learned this tip from a coworker, and I'm counting on it to work. I made pickles last year that turned soggy, which was not delightful.
After a few more weeks, I'm going to dig in and give these a try. I can't wait!
