A Luau with Jackfruit. Vegan and Gluten-free

For the fourth of July weekend, my group of friends traditionally head out to the coast to celebrate the holiday as well as our friends' anniversary.

This past weekend the married couple wanted to hold a luau at the beach that included everything a traditional feast would, including pork and chicken. I decided to take care of my own appetite and started experimenting with a delicious canned fruit called jackfruit.

This stuff is fantastic! I didn't do any extra reading to find out any more about it, but after seasoning it and cooking it, it fooled even the most omnivorous in the group.

Pretty fantastic, huh?

I used this delicious recipe as a guide, then I added 1/4 teaspoon liquid smoke, and 1 1/2 teaspoon stone-ground mustard, which helped create an even more realistic barbecued flavor.

Wow, this is just like pulled pork - crazy!
