Whole Foods Cooking Club

I've had the fortune of being part of a recent development at my local Whole Foods grocery store. It is a cooking club based around whole grains and plant-based diets. Sounds perfect, right?

It has been delicious. I love trying new ingredients, seasonings and spices, and then seeing what other people have to say about them.

Here are the foods we've made so far (with the most recent first)...

1. Quinoa, Mushrooms and Peas with Miso
I served this with some sauteed garlic potatoes, sliced tomatoes, avocados, and a little sprinkling of Daiya mozzarella. It was soo flavorful, especially with the added miso. Using miso as a flavoring is a great idea, since I can't stand it on its own! I will definitely make this again.

2. Celery Citrus Salad with Balsamic [sans feta]
I really liked this, but by the fourth serving, I was really done with the parsley leaves (and the celery, really). My favorite part was the satsumas. They added a very fresh flavor to the dish.

3. Collards with Lentils, Tomatoes and Indian Spices
Wow, I had never cooked with garam marsala before and this first time was a delightful introduction. The collards were overbearing; I like them steamed and on their own, but added to this dish, they took over, both with texture and taste. Unfortunately, my picture looks like mush, but the meal really was delicious.

YUM! I recently took my first public cooking class (at a culinary institute) and I'm hooked. I need to keep an eye on my local Whole Foods to see if they offer something, too!

Garam masala is delicious. Indian spices are so great, and I highly recommend checking out the myriad uses of cardamom.
