Peanut Butter Quesadillas. Vegan and Gluten-free

I am positive I'm not the first person who came up with this concept, but I have been making peanut butter and jam "quesadillas" since I became vegan and since before I was gluten-free, and I feel like it's time I finally share them with the world!

In all honesty, I've never much cared for pb&j sandwiches (I know, gasp!) unless they were toasted and warm and all gooey inside. So, when I moved out on my own and became a vegan (and I was mourning the loss of cheese from my diet), I decided that toasting tortillas full of peanut butter and apricot or strawberry or blackberry jam in my toaster oven (or in a pan on the stove) might just be the perfect [bachelorette] meal.

You know what?  

I was right!

Mmm, look at the gooey, gooey peanut butter! This one's filled with chocolate chips & agave nectar, omg!
They are sooo delicious. Betcha can't have just one...

why have i never thought of this before?!?! you are too awesome, Geanna - i cannot wait to make some for myself, and i'm gonna go ahead and make 2! :) they look soooo delicious in every way!
