In all honesty, I've never much cared for pb&j sandwiches (I know, gasp!) unless they were toasted and warm and all gooey inside. So, when I moved out on my own and became a vegan (and I was mourning the loss of cheese from my diet), I decided that toasting tortillas full of peanut butter and apricot or strawberry or blackberry jam in my toaster oven (or in a pan on the stove) might just be the perfect [bachelorette] meal.
You know what?
I was right!
