No matter how you slice it (ha!), enjoying a piece of pizza is just about the best way I could imagine spending the end (or the beginning, or really any time) of any day.
Now, toast with me: to life, liberty, and delicious pie.
Yum.
I had a total Vegan Pizza Day fail. I didn't make it home [from work and then the grocery store] in time to have time to prepare THIS crust (sent to me by a Twitter friend [thanks, Meg!]; when buckwheat flour is used instead of wheat, it becomes gluten-free) as well as the pizza before I had to attend a friend's birthday party.
It was going to be a taco pizza, though, see, so I just made tacos instead.
However, perhaps we could just call this Vegan Daiya Day, since I'm assuming that's what most people ingested on their pizzas (forgive me, FYH and Teese fanatics!)?
My ingredients list:
2 blue corn tortillas
2 fingerling potatoes, sauteed with the next two ingredients
3 mushrooms
1 clove garlic
homemade refried black beans
half a tomato that came from lord knows where
half an avocado that tasted like, well, not very good things
lots and lots and lots of Daiya mozzarella cheese, melted, with double layers between the beans and the potatoes, then on TOP of the potatoes
So, I totally qualify for the Vegan Daiya Day, see?! Ultimately, it was hot and gooey and really painful to bring up to my mouth. Just like a slice of pizza.
So, I take back the fail and call this a definite win.
