I want to say to all that participated in Vegan MoFo: CONGRATULATIONS!
But, we did it!
To finish off this great month, I'm posting what I've started having for breakfast. My Twitter friend MegVegLibrarian (see her website here) inspired me to purchase a pomegranate, and, with some Nancy's Soy Yogurt, it has quickly become a delicious [and essential] breakfast staple.
I love the sour/sweet tangy and crunchy taste of the pomegranate seeds and, mixed with the subtle sweetness of the yogurt, it tastes like an absolute feast.
Plus, just look at the color combination; a gorgeous, deep garnet-red with a creamy white underneath. It doesn't get any more beautiful than that.
