Lack of Photos

You might have noticed a distinct lack of photos recently on this blog. Well, to be honest (I never thought I'd say this!)...my Mac has fritzed up a bit. Meaning, last week I took it in and got a new battery and logic board, and when it was returned to me, all the major programs (iTunes, iPhoto, Mozilla Firefox) didn't recognize my old files for those programs. Sooo...I've been busy uninstalling and reinstalling and transferring and backing up and, well, you get the idea. I've gotten EVERYTHING fixed EXCEPT iPhoto. Grr. It's just as important as the other programs, and maybe more so, since I like to blog with pictures, and it's taking me the longest to figure out. So, that's the explanation for the lack of pictures. I'm hoping that, by the end of the week, pictures will re-appear here. Let's keep our fingers crossed!

I wanted to show you all the piles (literally!) of collards I have right now. Actually, now that I think about it, I have piles of peaches and pickling cucumbers, also. I'm getting ready to can the peaches, pickle the cucumbers, and, well, I don't really know what I'm going to do with all the greens. I keep steaming them and sprinkling them with nutritional yeast for my lunches at work, but that's getting pretty old. Do you have any ideas for me to try? I'm open to anything (well, within reason, of course - I'm not interested in trying out pork fat with greens or anything silly like greens cupcakes)!

I'm not sure if it would work with collards, but I've roasted kale - tear it into smaller (chip sized) pieces, toss it with olive oil and a little salt, and roast in a single layer at 300 degrees for 15-20 minutes. It comes out all crispy and nice, like chips. But much, much healthier.
