a few weeks ago, and I have been processing to my heart's content ever since!
I've made almond butter, coleslaw, cashew "cheese", pesto (just to name a few), and today, I tried this delicious recipe for a fruit and nut bar.
I am ADDICTED to fruit and nut bars. I often scour the bar section at New Seasons, the Alberta Co-op and Whole Foods, looking for the newest bars or the best deals, but my favorites are definitely the Pure Bar and the Kind Bar. However, now that I have figured out how to make my own, I never have to spend money on one again! And, because of the processor, it's also really easy to make, providing you have all the ingredients on hand.
I used this recipe as my base from That Vegan Blog, but then went crazy with my own amendments. Personally, I think my new recipe turned out really well, and it was even approved by my very picky housemate!
Raw Fruit and Nut Bar
Makes 6 bars
1/3 c. raw hazelnuts
1/2 c. raw walnuts
1/4 c. raw cashews
1 c. dried Medjool dates
1/2 T. raw agave nectar
1/8 c. flax seeds
1 Madagascar vanilla bean
1/8 c. chocolate chips
1 t. ground cinnamon
- Process all ingredients together until it becomes sticky and fruit-bar consistency.
- Spoon onto a plastic-covered surface and portion off six bars' worth.
- Wrap each bar individually.
- Store in airtight container in the fridge for up to one week.
