Because I'm on a bit of a restricted diet due to my current digestive issues, eating out has become somewhat challenging. Of course, it was already a bit frustrating, being a gluten-free vegan, but now I'm restricted even more, so finding food on a menu that I can eat is not always possible. However, after walking around a bit downtown today, I found two places that offered delicious vegan salads that completely fulfilled me and my health issues.
For lunch, I had the Garden Veggie salad at Rivers Edge Cafe with the strawberry vinaigrette. It was humongous, and I could only eat half of it, but it was very tasty and filling.
For dinner, I enjoyed the Green Salad and the Pickle Platter at Kenny and Zuke's. Again, I couldn't eat all the pickled items, but they included onions, olives, capers, and Claussen-like cucumbers. Yum.
Of course, the eating out was made even more special by the fact that it was BEAUTIFUL and WARM outside! Finally, I think summer has arrived in Portland. Hooray!
