I couldn't have said it better myself.
I cook gluten-free and vegan all day, every day, yet I realize I've never taken the time to really discuss how to perfect a GF menu. Perhaps it's because I feel like I'm still learning, myself. After all, I've only been GF for 6 months, and it has added a big challenge to my diet, especially because I have removed rice (a usual substitution for gluten) from my menu.
