For my side dish, I cut up some carrots and put them in a pot with about 2 T. oil and 2 T. maple syrup. I heated it on medium-low for the amount of time that it took to prepare the quinoa dish, and it resulted in a lovely caramelized carrot dish.
For "dessert", I made some banana bread from Cooking Free, a cookbook by Carol Fenster. This was amazing. I chose not to add any nuts or raisins or anything else that might add a funky texture to the bread, so it resulted in only one loaf (the cookbook says it could yield two if such things were added). And what a delicious loaf it was! While it was still warm, I spread Earth Balance Soy-Free "butter" on top and gobbled it up. I definitely had at least 3 slices today, and it was gone by the time I left my friend's house this evening. I will probably be making it again in the next week. It was just that good.
Yes, I will admit, I added a LOT of "butter". But it melted so perfectly and tasted so absolutely delicious that I couldn't resist!
