Happy Easter!

I joined friends for an Easter craft night last week. My "craft" was making Easter candies. Of course, it got eaten that night, so I guess it was more of a "pre-Easter" treat, but it was a treat just the same. It was the first time I had ever made candy, let alone vegan candy, so it was quite the experimental experience! I picked up some white chocolate chips from Back to Eden (Food Fight sells them, but were out, so I was able to get them by the pound at BTE) and went to town. I double-boiled the chips, then poured the melted goop into molds and stuck fillings into them. Among the fillings were caramel pieces, peanuts, and peanut butter. They turned out deliciously, but, unfortunately, the peanut butter conflicted with the cooling process, so the candies with peanut butter in them turned out a little differently than the rest of them did. But, they were still yummy and rich and fantastic. My favorite was the kind with peanut butter AND peanuts. It had just the right amount of gooey-ness, crunchiness and flavor mixed together.
