I apologize for the lack of posting in the last week and a half or so. My grandmother died, which a) made my life very busy, what with family being in town and making funeral arrangements, and b) took me away from normal things like reading, scouring the internet for interesting environmental/vegan tidbits/events, and posting. So here I am, back after a short break, and ready to delve right back into the world of green vegan living!
I made a pretty amazing (if I do say so myself) yellow curry the other night for some friends, and it came right out of my own head. I used curry powder, coconut milk, carrots, fresh zucchini from my garden, and potatoes, and I served it over white rice.
I also made a delicious corn bread from the cookbook Real Food Daily (sidenote: I'm headed down to Pasadena in a few weeks, and I'm hoping to try out the restaurant that is owned by the author of the cookbook; if anyone has been there before, I'd love to hear feedback!) that supplemented a chili dish that I created last week in the crock pot.
Otherwise, I've been looking through some cookbooks, but I really haven't been inspired by any lately. I picked up Vegan World Fusion and 30-Minute Vegan from the library, but neither one really had any exciting recipes in them that I felt the need to try out. I'm taking home The Vegan Family Cookbook today, so perhaps I'll be thrilled into trying one or two things that I see in its pages.
