I found a few great cookbooks from the library and have enjoyed their recipes immensely.
Vive Le Vegan
The Vegan Family Cookbook
The Conscious Cook: I tried the vegan Caesar Dressing and Artichoke recipes in this book, and they tasted great. The only bummer was, I realized that I don't actually like Caesar dressing! Apparently, because I haven't eaten it in soo many years, I lost the taste for it, and didn't really enjoy even my own version. However, after chilling it for a few days in the fridge and trying it again, I decided that I did actually like it in minimal quantities. There are so many great recipes in this book, and each one is accompanied by a photograph. My only disappointment is that no Portland restaurants or chefs (i.e., Isa!) are mentioned in the book, when everyone knows that Portland is the Vegan Mecca. But, alas, as I will be traveling to California next week, I now have a collection of restaurants to choose from while I'm down there, thanks to the cookbook's directory.
I also got Waste and The Bloodless Revolution, both by Tristram Stuart, and they discuss the history and current events of vegetarianism. Just what I need to get me in the mood for a vacation!
