Bob's Red Mill, Part Deux

It's hard not to get gushy about Bob's Red Mill. I know that I have before, and hopefully this won't become as prevalent in my blog posts as my obsession with Isa or New Seasons. BUT! It's impossible not to get excited about a grain store that offers so many organic, gluten-free, vegan, etc. ingredients. I went this morning for a quick breakfast, and to use up my roommate's Chinook Book coupon for a half-off breakfast before it expired. I had the vegan flapjacks with garden sausage. I could only eat half of the dish, but I look forward to having the rest tomorrow for my lunch at work. Seriously, though, places that offer vegan dishes are awesome.

Speaking along those lines, my amazing and awesome couchsurfers made me dinner last night! It was the most generous and thoughtful thing they could have done. They made me delicious quinoa with roasted hazelnuts, raisins, and brown sugar, plus a yummy salad of cucumbers, tomatoes, and red onions with a fabulous balsamic dressing, and sauteed some broccoli with fantastic roasted acorn squash to finish. I couldn't stop eating everything because it was sooo good (well, that and I had just finished a 50-minute run and was STARVING!). So, really, my life is pretty good right now, at least food-wise. I have been playing around with using bananas in place of oil in a lot of my baking lately, and I have to say, for as much as I really don't enjoy fresh/raw bananas, having them in baked goods is really quite the addition.
