I canned my peaches on my own yesterday, with the help of this website. It was a fascinating process, one that I've seen both my sister and mother go through but one I've never done myself. It took a long time, from start to finish, but I think it will be worth it when, in the middle of winter, when everyone is craving fresh, local produce, I can whip out a mason jar of fresh Sauvie Island peaches and share them with everyone. THAT will be a satisfying treat!
