I went to the Deschutes Brewery last night, located in the Pearl District of Portland. I enjoyed the open space and friendly staff, but more importantly, I noticed how important limiting waste and preventing pollution was to them. Their menu repeatedly talked about using spent grain for hamburger buns and more, and on the special menu, an area at the bottom was devoted entirely to thanking local farmers for their supplies (food, etc.) that went into the meal that we ate. They care about buying local and organic foods, and also reducing any trace of their brewing production.

Plus, their beer is good. What more could you want?
