Try Vegan Week
If you have any thoughts about trying a vegan diet, but haven't found the time or haven't quite mustered up the courage, I urge you to participate in Try Vegan Week. It's a great time to explore the world of no animal products. Of course, it's much easier to participate in these events if you live in the Portland area, but trying out the diet wherever you live is a great idea, too. Try just one meal a day without using animal products and note how you feel. If you're anything like me, you'll feel so much better after eating. I used to have horrible stomach pains and heartburn, but not anymore! Simple foods to try as you're getting started: brown rice and steamed vegetables, stir fry veggies with soba noodles, a sandwich on whole-wheat bread (make sure it's vegan - that means no honey, either!) with hummus and fresh vegetables, oatmeal with dried fruit and agave nectar instead of sugar.
